Część oglądania zachodu słońca jest muzyką, opisywana jako ambient lub Easy Listening Music. Do tej pory powstało 14 ponumerowanych kompilacji, plus 2 albumy dla upamiętnienia 20 i 25-ciolecia . Na całym świecie sprzedano 9 milionów albumów.

Latem 2005 roku Café del Mar obchodziło swoje 25-lecie ze specjalnym albumem oraz festiwalem na wielkiej scenie naprzeciw morza. Café del Mar is a bar located in San Antonio, Ibiza, just to the west of the West End. It is a popular summer tourist destination, noted for its view of the local sunset. Café del Mar is the original Ibizan "sunset bar", opened by Ramón Guiral, Carlos Andrea, and José Les in 1978.

The Café del Mar releases compilation albums with tracks selected by the bar's own DJs. The music selection is intended to induce the mood that is experienced watching a sunset. The tracks are described as ambient, easy listening music. The bar originally sold their own tapes of the music but a series of Café del Mar CDs have been sold. As of 2007, there are 14 volumes, numerous side compilations, plus 2 albums commemorating the 20th and 25th Anniversary. A total of about 9 million albums have been sold worldwide.

The original first six volumes' tracklists were selected by José Padilla, a DJ then commonly found at the Café del Mar.

In the summer of 2005 Café del Mar celebrated their 25th Anniversary with a special album and a festival on a big stage in front of the sea. Four Café del Mar artists were invited to play live at the festival: D.A.B. (Spain), Tom Oliver (Germany, also on the 25th Anniversary CD), Paco Fernandez (Spain) and La Caina (France).
